1 baked pie crust
2/3 cp. sugar
3 heaping Tbsp. plain flour
dash salt
2 cps. milk
3 egg yolks, beaten
1 tsp. vanilla
2 Tbsp. butter
1 cp. sweetened shredded coconut
Meringue:
3 egg whites
1/4 tsp. cream of tartar
4 Tbsp. sugar
2 Tbsp. coconut

Directions:
Directions:
Combine sugar, flour and salt in large saucepan. Stir in 1 cp. milk and heat. Mix egg yolks with rest of milk and slowly stir into hot mixture. Bring to slow boil, stirring constantly until thickened (about 4 min.). Add butter, vanilla and coconut and pour into pie crust. Meringue: Preheat oven to 350. Beat egg whites, slowly adding sugar and cream of tartar, until stiff peaks form. Pile on pie, making sure sides touch crust. Sprinkle with coconut and bake until top is golden.
