Ingredients:  
2 cans of artichokes in water, drained and chopped
6 eggs
3/4 cup Parmesan (plus a little more)
1/4 cup parsley, chopped
3 garlic cloves, minced
1/4 cup bread crumbs, plus a little more
Salt and pepper
Extra virgin olive oil

Directions:
Directions:
Beat eggs, garlic and salt and pepper together.
Add artichokes, Parmesan and parsley.
Stir in bread crumbs.
Spread olive oil in 8x8 dish.
Sprinkle bottom of dish with extra Parmesan and bread crumbs.
Add artichoke mixture to dish and top with more Parmesan cheese.
Bake at 350 for 30-40 minutes.
Place under broiler to brown.
Cut into squares and enjoy.
May serve warm or at room temperature.
