1 cup cheese or beef tortellini
6 cups chicken or beef broth
1 can diced tomatoes
1 cup slice carrot
½ cup dices yellow onion
2 cloves garlic, minced
2 tsp. dried basil
1 tsp. dried oregano
¼ tsp. salt
⅛ tsp ground black pepper
Olive oil
Grated Parmesan cheese

Directions:
Directions:
1. In large stock pot, heat olive oil to medium-high heat. Add onions and carrots and saute until carrot is slightly soft.

2. Add broth, tortellini, tomatoes, salt & pepper. Bring to a boil, then reduce heat. Cover and simmer for 20 minutes or until tortellini is done.

3. Sprinkle each serving with Parmesan cheese.


Note: Either dried, frozen or fresh tortellini will work in this soup. You can also add 2 Tbs. of pesto, replacing the basil, oregano, and garlic.
