"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2 cups + 2 tbsp flour
½ tsp baking soda
½ tsp salt
12 tbsp unsalted butter, melted and cooled
1 cup brown sugar
½ cup granulated sugar
1 egg + 1 egg yolk
2 tsp vanilla extract
1½ cup semisweet chocolate chips

Directions:
Directions:
Preheat oven to 325º. Line 2 baking sheets with parchment paper.

In a medium bowl whisk together flour, baking soda, and salt.

Using an electric mixer on medium speed, beat butter and sugars until thoroughly blended, 2-3 minutes. Beat in eggs and vanilla until combined. Reduce mixer speed to low, add dry ingredients, and beat until just combined. Use a rubber spatula to stir in chocolate chips.

Roll a scant ¼ cup of dough into a ball. Tear ball in half, rotate torn sides up, and push back together into a single ball, being careful not to smooth the rough top edge. Place dough balls on prepared baking sheets spacing 2½ in apart.

Bake until cookies are light golden brown and edges start to set but centers are still soft and puffy, 15-18 min. Let cool on the baking sheets.
