Traditional Sweet Roll Dough |

Ingredients: 1 pkg. active dry yeast ¼ cup warm water (105 to 115º) ¼ cup lukewarm milk (scalded then cooled) ¼ cup sugar ½ tsp. salt 1 egg ¼ cup butter, softened 2¼ - 2½ cups all-purpose flour

Directions:Dissolve yeast in warm water. Stir in milk, sugar, salt, egg, butter and half of the four. Beat until smooth. Mix in enough remaining flour to make dough easy to handle.
Turn dough onto a lightly floured board (or a lightly floured muslin cloth on the countertop); knead until smooth and elastic, about 5 minutes. Place in a greased bowl; turn greased side up. (At this point dough can be refrigerated 3 to 4 days.) Cover; let rise in a warm place until doubled in volume, about 1½ hours. (Dough is ready if impression remains when touched.)
Punch dough down. Shaped into desired rolls. |

Cinnamon Roll Filling |

Ingredients: 2 tbl. butter, softened 1/4 cup sugar 2 tsp. cinnamon

Directions: |
Directions:Roll dough into a rectangle, 15X9 inches; spread with softened butter. Mix sugar and cinnamon; sprinkle over rectangle. Roll up, beginning at wide side. Pinch edge of dough into roll to seal well. Stretch roll to make even. Cut roll into 15 slices. Place slightly apart in a greased 13X9-inch baking pan, or in greased muffin cups. Let rise until double. Heat oven to 375 degrees. Bake 25 to 30 minutes, until tops begin to brown. |

Notes: I have very fond memories of learning to make yeast bread with my grandmother (Zada). Although she taught me how to make loaves of bread from scratch, homemade cinnamon rolls were a family favorite. It seems complicated, but once you get the knack of making yeast bread, it's really not so difficult - just a little time-consuming. And nothing says lovin' like homemade cinnamon rolls fresh from the oven!
