20 oz. refrigerated cheese tortellini
½ cup pesto sauce
⅓ cup mayonnaise
½ cup peas
¼ cup shaved or shredded parmesan cheese
¼ cup sunflower seeds (optional)

Directions:
Directions:
Cook tortellini according to package instructions. Drain and set aside.

In a separate bowl, mix mayonnaise and pesto sauce. Add to tortellini and gently fold in peas. Top wtih sunflower seeds and parmesan cheese.

This is one of my favorite take-to-work summer lunches. It will keep refrigerated for up to a week. When making for lunch, I mix in sunflower and parmesan cheese before refrigerating. I also use a little less pesto as I'm not a huge basil fan.
