3 Chicken breasts, halved, skinned and boned
salt and pepper to taste
flour
olive oil
2 bunches spring onions
1 gr. pepper, chopped
1 14 oz can artichoke hearts in water
1 pound fresh mushrooms, sliced
3 C chicken stock
1 pint cherry tomatoes, halved
1/2 C parsley, freshly snipped
1 10 oz package of yellow rice mix
Directions:

1. Season chicken with salt and lemon pepper
2. Dredge seasoned chicken in flour
3. Brown chicken in olive oil and drain on a paper towel
4. In remaining oil, salute onion and green bell pepper
5. Add artichokes and sliced mushrooms
6. Add about 1 C of chicken stock and cherry tomatoes to vegetables
7. Arrange chicken in a 3 quart baking dish
8. Pour vegetable mixture over chicken and sprinkle with parsley
9. Cover with foil and cook at 350 for 40-45 minutes.
10. Prepare rice per directions, substituting chicken stock for water
11. Serve chicken over yellow rice
