675g carrots (chopped)
2 cloves garlic
2 tbs olive oil
1/2 small onion, very finely chopped
2 tsp ground cumin
1-2 tbs lemon juice
1 tsp harissa paste
salt to taste

Directions:
Directions:
Cook carrots and garlic in a pan of boiling water until tender. Drain.
Meanwhile, heat the oil in a large pan, add onion and cook until softened. Add cumin and heat gently until fragrant. Add carrots, garlic and remaining ingredients. Remove from heat. Mash or puree. Cool and eat with crispy lebanese bread or similar.
