6 cups chicken broth
1 can red enchilada sauce
1 onion, chopped
1 Tbs minced garlic
1-2 peppers in adobo sauce, chopped
1-2 cans black beans, rinsed and drained
2 tsp. dried oregano
1 bunch fresh cilantro, washed and chopped
2 grilled chicken breasts, chopped or shredded
½ cup shredded Mexican Blend cheese

Directions:

1. In large stock pot, heat olive oil and saute onions and garlic until soft.

2. Add chicken broth, tomatoes, chili peppers, oregano, enchilada sauce, beans and chicken. Bring to a boil and simmer for 20 minutes.

3. Add cheese, stir until melted. Add chopped cilantro.
