1 head of cabbage (not nappa or savoy) thinly cut
3 carrots peeled and grated
4 Tbl sesame oil
4 Tbl soy sauce
2 Tbl red wine vinegar
1/2 tsp sugar
1 Tbl mince garlic
1/2 Tbl grated ginger
salt
pepper
Chili flakes

Option - shredded green pepper

Directions:
Directions:
Very important to slice the cabbage as thinly as you can. Half the head. Start at one end slowly.

Mix everything in a bowl except for the carrots. Taste. If it is balanced then you are ready to toss.

In a salad bowl, put half the cabbage then some carrots and dressing. Mix. Repeat.

You can sprinkle toasted sesame seeds on top.
