3 zucchini
1 egg plant
1 red or yellow pepper
1 large onion
2 Tbl minced garlic
1 12 oz can crushed tomato
1 Tbl tomato paste
2 Tbl red wine vinegar
1 bay leaf (take it out before serving)
1/2 tsp oregano
1/2 tsp basil
1/2 tsp sugar
1 tsp salt
1 tsp pepper
4 Tbl olive oil (not extra virgin)

Peel skin, and cut the zucchini into chunks (not into rounds).

Cut up the pepper, remove seed and stem.

Cut up the eggplant, remove the top, and cut into chunks.

Smash, remove the skin, and mince the garlic.

In a pot, put in olive oil, then zucchini and stir.

Next is garlic and eggplant, stir. Then pepper and the rest of the ingredients, stir.

Now simmer and stir, takes about 30 minutes. Cover the pot and let it sit until ready to serve.

The longer it sits the tastier it gets, there will be some juice. Adjust salt. Good over rice or potato.
