1 lb shrimp take out shell and take out the vein
(The curvy top side, cut from front to end, sometimes there is a grayish digestive track, remove with knife.)
6 eggs room temperature
1/2 tsp minced garlic
1/2 tsp salt
1/4 tsp pepper
1 Tbl chinese wine
1 sprig of green onion chopped
vegetable oil for frying pan

Directions:

Prepare shrimp, clean and pat dry.

Marinate with chinese wine, salt and pepper. Set aside.

In a bowl, scramble the eggs add salt and pepper and 1 Tbl of water.

Chop green onion, and mince garlic.

Heat frying pan with some oil.

Put in shrimp, turn, put in garlic, cook shrimp both sides. Set aside.

Heat up the fying pan with oil again. Pour in egg mixture. Stir.

When egg is 70 percent done, add cooked shrimp, stir, add green onion.

Option - add some chilli oil or chilli flakes to make this dish spicy.
