2 lb fresh whole fish (bass, tilapia, sole,...)
2 tsp julienne fresh ginger (slice then cut into match stick)
2 sprigs of green onion
3 Tbl soy sauce
3 Tbl vegetable oil
1 Tbl chinese wine

Clean fish under cold water, wash inside and out even inside the stomach.

Cut gills, be careful. Cut the tail off the fin part.

Dry the fish, inside and out.

Cut the top green parts of the green onion (4 "). Put on bottom of serving dish.

Lay the fish on top of the green part of the onion. Make two deep diagonal cuts on the to of the fish both sides. This helps the fish to cook evenly.

Splash the wine in the stomach and use had to rub over top and bottom. Sprinkle with salt.

Put the ginger in the stomach opening and sprinkle the rest on top. Wrap in plastic wrap.

Put the fish in the microwave, 7-8 min. Take it out, take away plastic, and drain the juice.

Heat up oil, put in chopped green onion. Turn off heat add soy sauce. Pour mixture onto fish. Serve.

Easiest way of steaming fish. If you don't use a whole fish, cut down on the cooking time and sprinkle ginger on top before microwaving eg Halibut, salmon filet,...
