2 cups peanut butter, any style
1 cup sugar
2 eggs
1 teaspoon vanilla (optional)

Preheat oven to 350º

Combine all ingredients and stir until smooth. Drop by heaping tablespoon onto ungreased cookie sheets (or lined with parchment paper, as I do), and press lightly with a fork in two directions. Bake 10 minutes then cool completely on wire rack.
