4 cups cold boiled rice
1/2 cup diced ham
1/2 cup frozen peas (optional)
1/4 cup scallions cut in 1/8 inch pieces
2 eggs
2 tablespoons soy sauce
1/4 teaspoon sugar
3 tablespoons plus 1 teaspoon vegetable oil

Beat eggs and scramble them slightly in 1 teaspoon of oil. Do not overcook. Cut into slivers or break into small pieces. Set aside. In a wok or heavy frying pan heat the remaining oil. Add rice and stir so it does not stick. Add the peas (if using, soy sauce, and sugar and continue to stir until it is almost hot. Add the the eggs, ham and scallions. Stir until everything is heated. Serve at once.

Notes from Linda Allan. Traditional Chinese cooks use long grain white rice but brown rice works too. It is important that the rice is cold when you start. Can use a little finely chopped sweet onion for the scallions or use finely chopped green pepper. Thick slices of deli ham can be cut into pieces if you do not have other ham. Adjust the amount of soy sauce to taste or add more at the table. I use a non stick frying pan to cook this in so it doesn't stick.
