36 Ladyfingers (Italian is the best)
6 Large Eggs (separated)
3/4 C Sugar
2 tsp instant Espresso or 2 TBL instant Coffee
4 tsp Cognac or Whiskey
1/4 C Coca powder (sifted)
16 oz Mascarpone (room temperature)
1/4 C Whipping cream
pinch of salt
water

Directions:
Directions:
Combine egg yolks, half of the sugar, Cognac, Mascarpone, salt, and cream. Beat 5 minutes

Beat egg whites until stiff and fold gently into Mascarpone mixture.

Boil one cup of water, put in instant espresso or coffee, and the rest of the sugar and stir.

Dip lady fingers into coffee and place a layer on bottom of serving dish (6x9).

Add a layer of Mascarpone mix and sprinkle with cocoa. (half)

Add a layer of lady fingers.

Add a final layer of Mascarpone mix and sprinkle with coca.

Cover with plastic wrap. Refrigerate for at least 2 hours before serving.
