1 unbaked 9" pie crust
1 Tbsp. butter
1/2 cp. chopped onion
1 cp. chopped mushrooms
2 cps. spinach, stems removed
1/4 tsp. each of salt and pepper
3 eggs
1 cp. evaporated milk
1 cp. 2% milk
1/2 cp. shredded swiss cheese

Directions:
Preheat oven to 350. Melt butter in pan and saute onions. Add mushrooms and cook a few min. Add spinach and salt and pepper. When spinach has wilted, remove from heat and spread over bottom of pie crust. Sprinkle cheese over top. Beat eggs and milks together and pour over cheese. Bake 45 min. Allow to cool 5 min. before cutting and serving
