1 large lemon
1 tsp. grated lemon zest
4 eggs, beaten
1 stick butter, melted
1 1/2 cps. sugar
1 tsp. vanilla
1 unbaked pie crust
Cool Whip

Directions:
Directions:
Preheat oven to 350. Cut lemon in half, remove seeds and squeeze all the juice into a cup. Melt butter, add sugar, eggs and vanilla. Beat in lemon juice and zest until smooth. Pour mixture into pie shell and bake 40 min. Allow to cool in refrigerator before cutting. Serve topped with Cool Whip.
