1⅓ c flour
3 tsp baking powder
½ tsp salt (reduce to ¼ tsp)
3 tbsp sugar (reduce to 1 tbsp)
1 egg
1¼ c milk
3 tbsp melted butter or vegetable oil (omit)
¼ tsp vanilla

Directions:
Directions:
Mix flour, baking powder, salt, and sugar together. Beat egg thoroughly; add milk. Make a well in the centre of dry ingredients and add egg mixture. Add melted butter and vanilla. Stir until ingredients are just mixed and the batter is still lumpy. Drop by ¼ cupfuls on to hot pan. Cook the pancakes until they are filled with bubbles and the under-surface is golden brown. Turn and brown the other side. Serve hot with butter, maple syrup.

yield: 10 - 12 pancakes

Variations:

Buttermilk Pancakes:Swap buttermilk for milk. Reduce baking powder to 1½ tsp. Add 1 tsp, baking soda in 1 tsp warm water.

Blueberry Pancakes: Make pancake batter, increasing sugar to ⅓ c. Reduce milk to 1 c. Add 1c floured blueberries. Cook slower than plain pancakes.

Apple Pancakes: Make pancake batter. Reduce milk to 1c. Add ¼ tsp vanilla, 1c grated raw apple and ½ tsp baking soda dissolved in 1 tsp warm water.

Ginger n' Spice Pancakes: Make pancake batter. To dry ingredients add: ¼ tsp ginger, ¼ tsp cinnamon, and ¼ tsp warm water.

Banana Pancakes: Make pancake batter. Reduce sugar to 2 tsp and milk to 1c. Add a few grains of black pepper to dry ingredients. Fold in ¾ c mashed ripe banana at end.
