6 large bell peppers
2 cups uncooked rice
1 lb. ground chuck
2 cps. chicken stock
1 can diced tomatoes
1 chopped onion
1 cp. grated cheddar cheese
1/4 tsp. nutmeg
salt and pepper
tomato sauce (optional)

Directions:
Directions:
Cut tops out of bell peppers. Remove seeds from inside and place in crockpot. Mix beef, rice, tomatoes, cheese, onion and seasonings together and stuff peppers. Pour stock into crockpot, top peppers with tomato sauce (optional), cover and cook on high for 5 hours.
