1 cup flour
1 tsp. salt
1 tsp. baking powder
2 eggs at room temperature
½ cup milk
1 tsp. oil - canola or Crisco
1 (15 oz.) can of corn or
2-3 apples sliced thinly
more oil for frying

Directions:
Directions:
Stir all ingredients together. Drain corn. Add to batter. Stir together. Heat oil in a frying pan to ½ inch depth over medium heat. Drop batter by spoonful's into hot oil. Make sure the oil is hot enough so they bubble when added or they'll absorb too much oil. Do not cook too fast or they will brown on the outside but be uncooked on the inside. Turn until nicely browned. Drain on paper towels. Additional oil will have to be added during the frying process, but add slowly so the temperature of the oil stays relatively constant.

My Mom served these to my brothers and I when we were kids. Corn fritters are great served with butter and salt or maple syrup. They make a nice quick meal with a salad and were a Friday night favorite during Lent. But don't wait for Lent, we have them often for lunch. Apple fritters are made using the same process but substituting apple slices for the corn. When done frying, let drain on paper towels and sprinkle with confectioners sugar.
