¼ cup oil or margarine
2 cups chopped onion
1 lb. ground turkey (or beef)
1 cup ketchup
2 T. prepared mustard
2 T. vinegar (I prefer rice wine or balsamic vinegar)
⅓ to ½ cup dark molasses
1 - (4 oz.) can mushrooms, drained
2 - (1 lb.) cans pork and beans
1 - (1 lb.) can red kidney beans, drained
6 -12 dashes of your favorite hot sauce, depending on how spicy you prefer your food

Sauté onion in oil or margarine until golden. Add ground beef or turkey, cook until no longer pink. Drain grease. Mix browned onion and meat, and remaining ingredients in a 2 quart casserole or crock pot. Bake uncovered in 400º F oven for 30 mins. or 350º F for about 50 to 60 minutes. If using a slow cooker, heat on high for 2 to 3 hours, covered, stirring occasionally.

I have adapted and changed my aunt's basic baked beans recipe over the years. It has evolved into more of a baked bean/chili recipe with both sweet and spicy flavors. I prefer using ground turkey instead of beef, it eliminates the need to drain off excess grease. You can also add different kinds of beans, like pinto or great northern, for variety.
