small (8-10 inch), enough for everyone to get a half zuke
sour cream
grated parmesan cheese
shredded cheddar cheese (or cheese or your choice)

Par boil the zucchini until softened but not to the point of being mushy. Let cool enough to handle. Cut in half lengthwise, and scoop out the seeds with a spoon, leaving the flesh and skin of the zuke in a canoe shape. Put the seeds in a mixing bowl and coursely puree with an immersion blender, then drain off as much excess water as you can. Mix in an amount of sour cream roughly half the volume of the pureed seeds. Do the same with the grated parmesan. Add seasonings to preference and taste. You can add additional ingredients, like crumbled bacon, minced garlic, diced onions, whatever you like, if you want. Mix thoroughly and spoon into the zucchini, filling the trough made by scooping out the seeds. Place on a baking sheet, sprinkle with shredded cheddar (or your cheese of choice), and place under a broiler until the cheese has melted and lightly browned. Serve.

I found this recipe in a cookbook somewhere, but I experiment with it every time I make it, so the recipe has evolved a bit, which is the appeal of this dish. You can try something different every time you make it, and it will probably turn out OK, or probably better.
