4 quarts small beets

Pickling ingredients:
3 cups vinegar
2 cups water
2 ½ cups sugar
1 tsp. allspice
1 tsp. pickling spice
1 tsp. salt

Directions:
Directions:
Cook beets til skin falls off. Put beets in (4) quart jars. (I do a mixture of quart and pints.)

Combine pickling ingredients in pan, bring to a boil then simmer 5 minutes. Bring syrup to boil again and pour over beets - if not enough to cover beets pour hot vinegar over them.

Seal jars by hot water bath or pressure cooker. (I pressure cook them for about 10-15 minutes at 5 lbs. pressure.)
