1 T. olive oil
2 T. butter
3 large shallots, sliced
1 lb. green beans
Pepper to taste

Directions:
Directions:
Blanch green beans in boiling water 6 minutes. Immerse into cold ice water to stop cooking. Drain on paper towels. Sauté shallots in oil and butter 5 to 10 minutes. Add beans to pan to heat through and sprinkle on pepper to taste.
