Five pounds of a mix of black & green olives in brine; not pitted.
1 C EVOO
1Tbs sliced fresh, minced garlic
1/4 C red wine vinegar (optional)
1 T dry oregano
1 T dry basil
1-2 tsp hot pepper flakes
1 tsp black pepper

1. rinse and then drain the olives for 15 minutes in a large colander
2. sauté the garlic in the olive oil on low heat for a few minutes, but do NOT brown. Browning makes garlic terribly bitter. Anyway, then REMOVE & TOSS the sliced garlic (my friend Elise Fenner always raises the potential of botulism when garlic is stored in oil. You could use granulated garlic instead she says. I have no data on the issue. You are on your own on this...YOUR OWN RISK)
3. add all other spices to the oil & stir
4. toss everything in a large stainless steel bowl
5. serve & ENJOY!
