1 cup sugar
1/2 cup butter, softened to room temperature
1½ tsp Madagascar Vanilla Paste
1 egg

1½ cups all-purpose flour
1/2 cup bakers cocoa powder
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

3/4 cup Peanut butter baking chips

Pre-heat oven to 375º

In a large mixing bowl, with an electric hand mixer, beat sugar, butter, vanilla and egg until light and fluffy. Beat in flour, cocoa, baking powder, baking soda and salt on low speed about 1 minute, (dough will be stiff).

With a mixing spoon, stir in peanut butter chips.

Shape into 1" balls and place 2" apart on un-greased cookie sheets. Flatten "slightly" .

Bake for 8-10 minutes. Remove immediately from cookie sheet onto cooling rack.

You can substitute the peanut butter chips for Butterscotch chips, or white chocolate chips to give a different flavor.

To give a different flavor all together, omit the chips, roll the dough balls in powdered sugar before baking. This will give it a fudgy flavor with a cracked powdered sugar appearance.
