Pumpkin Cheesecake Recipe

Crust: 1 cup graham cracker crumbs, 1 Tbsp sugar, 4 Tbsp butter, melted.

Filling: 2 (8 oz) pkg cream cheese, softened to room temperature, 3/4 cup sugar, 1 (16 oz) can pumpkin, 1¼ tsp ground cinnamon, 1/2 tsp ground ginger, 1/2 tsp ground nutmeg, 1/4 tsp salt, 2 eggs.

Topping: 2 cups sour cream, 2 Tbsp sugar, 1 tsp vanilla extract, 12 pecan halves.

Combine crust ingredients. Press into bottom of a 9" spring form pan; chill

Pre-heat oven to 350º

For Filling: Beat cream cheese and sugar in a large mixing bowl until well blended. Beat in pumpkin, spices and salt. Add eggs, one at a time, beating well after each. Pour into crust.

Bake for 50 minutes.

Topping: combine sour cream, sugar and vanilla. Spread over filling, then return to oven for 5 minutes.

Cool on rack then chill overnight. Top each serving piece with a pecan half. (Optional)

****Cheese cakes are a hard one to make only because it's hard to keep the cheesecake top from cracking. After
much trial and error and frustration, I have found two ways to avoid the cracks.

1. My favorite and most true method is to cook my cheese cake in my Roaster oven. Still at 350 degrees, but I add the rack to the roaster, fill water to just below that, then set the cheese cake pan on top of the rack so that the water is not touching the pan, lightly place a piece of tinfoil over the top, (keeps the moisture from dripping on top while cooking)

2.If you don't have a Roaster Oven, fill a baking pan with water and place on rack below the cheesecake. This will help with the cracking.

Every time I make this or just a regular Pumpkin Pie, I think of my daughter, Lisa. Growing up she did not like cakes. I know, crazy and unbelievable, but true. However, she loved, loved, loved, Pumpkin Pie. For her Birthdays I got to where I would have a regular birthday cake for everyone else and then a pumpkin pie for Lisa to enjoy and celebrate.

If you ever have her over for Thanksgiving....FYI...make Extra pumpkin pie!
