⅓ cup butter
1 large bulb of garlic 20 cloves
1 ½ tsp salt
Freshly ground pepper
Pinch nutmeg
3 ½ lbs broiler-fryer

Place butter in 2 1/2 quart casserole
Dish with cover. Preheat oven to
375. Trim ends off individual cloves of garlic and drop into a pan of boiling water for about 10 seconds. Drain
And run under cold water; slip off the skin, set aside. Cut up chicken and add to the casserole and turn to coat well. Lift out half the pieces. Sprinkle
Pieces in casserole with half the garlic, salt and generous amount of pepper and dash of nutmeg. Return remaining chicken to the casserole and repeat. Cover and bake 1 1/2 hours. Do not open the door while baking. Serve with slices of French bread.

Don't flinch! Twenty cloves of
garlic is correct, but they're not crushed. Dip crusty bread in the garlic butter drippings. Smells marvelous cooking
