3 strips bacon, cut into small pieces
4-6 crisp, sweet apples
1/3 cp. brown sugar
1 1/2 Tbsp. plain flour
1 tsp. cinnamon
1 pinch salt
3 Tbsp. bourbon
Topping:
8 Tbsp. COLD butter, cut in 1/2" pieces
1/2 cp. crushed gingersnap cookies
1/2 cp. plain flour
1/2 cp. white sugar
1/2 cp. brown sugar

Directions:
Directions:
Fry bacon pieces in iron skillet until crisp, transfer to bowl and drain grease from skillet. Peel, core and cut apples into pieces. Add apples to bacon and mix in the sugar, flour, cinnamon and salt. Stir in the bourbon and pour mixture into skillet. Topping: Place cold butter, cookies, flour and sugars in food processor and grind until crumbly. Sprinkle over apples. Place skillet in oven and bake 40 min. until bubbly. Serve hot with a scoop of ice cream.
