1 loaf Italian bread (trimmed and cut into 1" cubes)
½ c softened butter
⅓ c mozzerella cheese (shredded)
⅓ c old cheddar cheese (shredded)
⅓ c swiss cheese (shredded)
4 oz cream cheese
½ tsp mustard powder
⅛ tsp cayenne pepper
salt to taste
2 egg whites

Directions:
Directions:
In a saucepan, combine butter and all the cheeses. Stir over medium heat until well blended.
Add in mustard, cayenne, and salt. Remove from heat.

In a separate bowl, beat egg whites until stiff peaks form. Fold into cheese mixture.

Dip bread cubes into cheese mixture one at a time, making sure each is well coated. Arrange on a baking sheet, making sure they do not touch. Freeze. (You may store the balls in a covered container until ready to use.)

Bake at 400ºF on an ungreased baking sheet until lightly browned (aprox 10min)
