Mom's Perfect Potato Soup Recipe

Ingredients: 6 cups diced raw potatoes 8 cubes chicken bouillon minced onion, or fresh chopped onion 6 cups milk 1/8 tsp pepper, (I like to use fresh course ground pepper) 5 cups boiling water 8 Tbsp butter 8 Tbsp All-Purpose flour 4 tsp salt

Directions:Cook diced potatoes in boiling water until cooked through, (somewhat mushy when pressed with a fork) Drain water into a bowl, saving it. Add bouillon cubes to water, place a lid over the bowl and let sit to allow the bouillon cubes to dissolve.
Melt butter in a large saucepan. Add minced or fresh chopped onion into the skillet and saute' in the butter on low heat for about 3 minutes, onion should be soft. Sprinkle in flour flour and stir until a paste forms. Remove from heat.
Add milk milk and potato water all at once into the saucepan with the flour paste. Stir in salt and pepper to taste.
Return to medium heat and cook until boiling and smooth, stirring constantly.. Turn heat to low and simmer 2 minutes.
Stir in potatoes and heat well.
I like this creamy, buttery soup served with toasted sourdough bread for dipping. |

Notes: My mom and I discovered a wonderful soup at Barona one time. It was called Creamy Pablano and Chicken soup. It was sooooo amazing. Every time we go there we ask for the soup, but unfortunately it has never been available again since that one time. I played around with my Potato Soup recipe and roasted some Pablano peppers on the grill, diced them up and added to my potato soup recipe, and added 3 cooked and diced chicken breasts. It was not exactly the same as Barona's...but I must admit....just as addicting.
