1 Chip slice green tomatoes
4 lbs. sliced onions
1 dozen green peppers sliced in strips
3 hot peppers sliced
2 cups sugar
1 quart vinegar
1 cup pickling spices
cheese cloth

Directions:
Directions:
Place above ingredients in layers in a chip basket and salt top layer thoroughly. This is to remove water content.

Next day;

Place above ingredients in a pot and add 2 cups sugar, 1 quart vinegar, 1 cup pickling spices (placed in cheese cloth) , let come to boil and simmer 15 minutes. Remove pickling spices and place piccalilli in sterilized jars and process in a hot water bath.

Makes about 12 pints jars. Leave season two weeks before eating.

Wear rubber gloves to protect hands from acid burns.
