1 Pork Tenderloin
1 c. Onion(chopped)
¼ c. Olive Oil
1 c. Roasted Red Peppers (I roasted two in oven for 15 minutes with olive oil and salt. Let cool)
¾ c. Sour Cream
1 packet Hidden Valley Ranch© Dressing Mix

Directions:
Directions:
Cook Pork Tenderloin (in oven or on grill). While meat is cooking sauté onion in olive oil until soft and light brown. Stir in roasted red peppers and heat through. Remove from skillet and stir in sour cream and dressing mix. Transfer to blender or food processor. Puree until smooth and serve warm with pork tenderloin. Can make sauce ahead a time and warm it up before serving.
