2 c. finely chopped cooked chicken
1 tsp. salt
2 tsp. minced parsley
1 tbsp. lemon juice
1-1/4 c. flour
2 tsp. baking powder
1 egg, beaten
2/3 c. milk
vegetable oil for frying

Directions:
Directions:
In a large bowl, toss chicken with salt, parsley and lemon juice. Set aside for 15 mins. In another large bowl, combine flour, baking powder, egg and milk. Stir well to blend.
Add flour mixture to chicken and mix well.
In a large frying pan, heat 1 inch of oil to 375º.
Drop batter by tablespoons into hot oil and fry in batches, without crowding, for 2 mins, until golden brown. Drain on paper towel and serve with honey mustard for dipping.
