Ingredients: 1 small chicken ¼ lb. pork ¼ lb. shrimp (shelled, deveined & halved) 1 tsp. salt ¼ tsp. pepper 1 medium carrot (cut into strips) 1½ c. cabbage (shredded) 3 Tbsp. cooking oil 2 cloves of garlic (minced) 1 medium onion, thinly sliced 1 Tbsp. Patis (may omit) 2 green onions (chopped) 2 hard cooked eggs (shelled & quartered) 1 lb. Bihon (rice vermicelli or rice sticks) soaked for 15 minutes and then drained 1 Tbsp. lemon juice and ¼ c. Patis

Directions:1. Cover chicken and pork with water in a pot and bring to a boil. Simmer 15 minutes. Drain but save broth. 2. Remove meat from chicken and cut into small pieces. Cut pork about the same size as chicken meat. 3. Sauté garlic and onion in hot oil in large skillet. Add meats and Patis. Sauté for 3 minutes. Add about 2 c. of broth and simmer for about 10 minutes. 4. Stir in shrimp and vegetables. Bring to a boil. Reduce heat. Add Bihon, salt and pepper. Cook stirring until Bihon is tender. Add more broth if mixture becomes too dry before noodles are done. 5. Serve hot garnished with quartered eggs, green onions and lemon wedges. Serve Patis with lemon juice in a small bowl for extra seasoning.
Preparation time: 25 minutes Cooking time: 30 minutes Serves 6 - 8 Note: May adapt meats to suit. |
