1 four - 8 pound boneless or bone-in or Pork Butt or Pork Shoulder
3/4 teaspoon ground Black Pepper
3/4 teaspoon Onion Powder
1/2 teaspoon Kosher Salt
Chicken Broth or Bullion

Directions:
Remove pork roast from the refrigerator and let it sit at room temperature for 30 minutes to one hour. Preheat oven to 300º. Combine the spices and sprinkle all over the roast. Place the roast in a large roasting pan, fat side up.Add about 1/2 inch of chicken broth to the bottom of the pan. Place into the oven, uncovered. Roast for 40 minutes per pound to an internal temperature of 160. Remove from oven and lightly cover with foil. Allow to rest for 30 - 40 minutes. Preheat the oven once again to 475º. Transfer the roast to a clean roasting pan and return to the oven for an additional 13 - 17 minutes or until browned. Meanwhile, use the juices in the original roasting pan to make gravy. When the roast is browned, remove from the oven and carve immediately. Serve with gravy.
