½ cup butter or margarine
1 cup sugar
1 egg (whole)
1 egg yolk
1 ½ cups sifted flour
1 tsp baking powder
½ tsp salt
¼ cup lemon juice (1 large lemon)
Grated rind of lemon

Directions:
Directions:
Preheat oven to 350º
Work butter or margarine until soft and creamy
Work in sugar gradually to butter until mixture feels reasonably smooth
Beat the whole egg and the extra egg yolk together and stir slowly into the creamed mixture
Sift flour, baking powder, and salt together
Add flour mixture to the batter alternately with the lemon juice
Beat hard after each addition
Stir in lemon rind
Grease cookie sheets
Drop batter by the teaspoonful onto cooking sheet allowing room to spread
Bake 10 minutes
Remove cookies and put on wire rack
Sprinkle tops of cookies with a little sugar while they are hot
