2 whole chicken breasts
1 medium onion thinly sliced
1 ½ cups celery sliced thin
1 can bamboo shoots
¾ lb. snow peas
2 tbsp. of peanut oil.
1 ¼ cup chicken broth
1 tsp. sugar
1 tbsp. cornstarch
¼ cup soy sauce

Directions:
Directions:
Cut chicken into small pieces. Heat oil add chicken and cook until white ( about 10 minutes). Add onion and celery and cook a few minutes, then add chicken stock and simmer for about 10 minutes. Mix soy sauce, sugar and corn starch and add to vegetables after bamboo shoots and snow peas. simmer till thickened

Serve over brown rice or spaghetti.
