1 eggplant any size or green tomatoes or okra or cauliflower
One egg
1/2 cup of milk
Oil for frying
Self rising cornmeal (it has sodium in it)

Directions:

Wash veggies
Mix egg and milk together until well combined
Pour oil in small skillet
Put cornmeal in a container to dip veggies in


Cut eggplant in French fry style size pieces
Slice tomatoes
Cut medium okra in half, leave small okra whole
Cut cauliflower in manageable size pieces
Dip veggies in egg milk mixture, dredge in cornmeal
Fry all in hot oil fry on medium high heat or medium heat until golden brown.
Serve with spicy ketchup


This recipe is for fried eggplant but can be used for all veggie The picture above is fried eggplant and it is delicious!
