1 cup sugar
1/3 cup shortening
1/2 vanilla
2 eggs
3/4 cup mashed potatoes
3/4 cup milk
3 3/4 cup flour
4 tsp baking powder
1 tsp salt
1 tsp nutmeg

Directions:
Directions:
Cream shortening, vanilla and sugar. Beat in eggs and potatoes. Mix all dry ingredients in seperate bowl and alternate flour with milk into creamed ingredients.
Chill at least 1 hour.
Roll out dough and use a doughnut cutter to cut. Fry in hot oil (I use Crisco in a wok). Make sure oil is hot enough by testing with a doughnut hole. Oil is ready when dough is immediately covered with bubbles and pops up quickly to the top of the oil.

My mom found this recipe when I was really little in an old Betty Crocker cookbook. She used to come to our classrooms each year and make doughnuts for everyone in our class. It was a very popular event!
