3 cups zucchini grated
1 1/2 cup Bisquick
1/2 cup grated Parmasan cheese
1/2 cup Mozzarella cheese
1/2 cup olive oil
4 eggs beaten
1 onion chopped or grated
1 clove garlic chopped
2 tbsp. fresh parsley chopped
1/2 tsp. salt - dash of pepper

Mix all together pour into greased jelly roll pan. Bake at 350 º for 30 minutes.
