Ingredients:  
Ingredients:  
1 lb ground beef
1 egg beaten
¼ c long grain rice
2 10½ oz cans beef broth
6 oz can tomato paste
2 medium potatoes peeled and cubed
¼ c chopped cilantro
2 tblsp oil
4 c water
2 medium carrots sliced
1 tsp salt
½ tsp dried oregano
1 medium onion chopped
2 tsp minced garlic
Salt and pepper
1 bay leaf
¾ tsp chili powder

Directions:
Directions:
In large pot saute garlic and onions in 2 tblsp oil
Add broth, tomato paste,4 c water, chili powder,oregano,salt, pepper
Add carrots, potatoes & bay leaf
Simmer

In bowl mix together meat, rice and cilantro and egg
Form into small meat balls and drop in broth mixture
Continue to simmer until meat balls are thoroughly cooked, 20-30 minutes

Serve with assortment of condiments cilantro, chopped onions and dried oregano

I love 1 bell pepper chopped in broth
Also, 1/4 c pinenuts added to meatballs is good
I also like to serve it with marinated carrots consisting of parboiled carrots,sliced onions,vinegar, sugar, sliced marinated jalapenos (go easy). Simmer until soft with a little crunch
Refrigerate
