3/4 c. sugar
1/2 c. butter, softened
2 eggs
1 c. mashed banana (about 2 medium)
1/3 c. milk
1 tsp. vanilla
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped nuts, if desired

Directions:

Heat oven to 350 degrees. Grease the bottom of loaf pan with shortening or cooking spray. In a large bowl, beat sugar and butter with spoon until light and fluffy. Beat in the eggs. Then stir in the mashed bananas, milk, vanilla until well blended.

In a small bowl, combine the flour, salt and baking soda. Add the dry ingredients to the banana mixture and stir in the chopped nuts.

Pour the batter into prepared loaf pan and bake 50-60 minutes or until toothpick comes out clean. Cool for 5 minutes and then remove from pan. Allow bread to cool for 1 hour, then slice and enjoy!
