1 package yeast
½ c very warm water

½ c milk
½ c butter
⅓ c sugar
¾ tsp salt
1 egg beaten
4 c flour plus extra if needed

Directions:
Directions:
In small bowl mix yeast with warm water and set aside

In sauce pan scald milk (cook until milk bubbles around edge)
In a bowl pour milk ovet butter,sugar and salt
Cool to lukewarm
Stir yeast in water(granules should dissolve)
Add to milk mixture with egg and 2 c flour
Hand beat and add more flour and stir until it no longer stick to sides of bowl
Use remainder for flouring surface used in kneading
When smooth ball formed from kneading, place in greased bowl, cover and let rise until double, about 30 minutes
Punch down and form 3 1" balls for each greased muffin cup
Let rise again covered again until doubled- about 30 minutes
Bake 400º for15 minutes
Pop out and cool on wire racks then cover until serving
