Ingredients: 3 tblsp salt 1½ c warm water ¼ c butter 1 c small curd cottage cheese ½ c honey 1 c whole wheat flour 2 packages dry yeast 1 egg 5½ c bread flour divided into 1 c & 3½ c & 1 c Grease for bowl and muffin tins

Directions:In a saucepan melt in very water warm salt, and butter until butter melted Add cottage cheese and honey until warm(low heat) In a large bowl mix these ingredients with 1 c flour and 1 c wheat flour 1 beaten egg and 2 packages yeast
Stir in 3½ c flour until well blended into a dense ball Sprinkle part of remainder 1 c flour to cover surface of parchment paper Knead dough for 2 minutes sprinkling on flour until vall of dough is smooth and no longer sticky
Let rise in a greased bowl covered for 45-60 minutes. It should have almost doubled in size Punch down and shape into 3 small balls per greased muffin tin cup Cover tin and let rise 30-45 minutes Bake in preheated 350º oven 15-20 minutes Pop out onto wire racks to slightly cool then place in basket lined and covered with towel to keep warm |
