4 Packages mushrooms ( Shitake, Portabello, Oyster and regular. One pkg. of each. ( You can us all regulea mushrooms to keep the cost down ).
About half a onion sliced
4 cups veggie broth ( I always use the Better then Bouillion - veggie available at Colasanti's & Meijer's. Use 5 cups of broth if you like thiner soup. )
¼ to ½ tsp. freshly grated nutmeg
¼ cup whole grain flour
3 bay leaves
a generous grinding of black pepper

Directions:
saute onions in olive oil and a litter butter if you like
Add mushrooms, saute til they start to brown
Add bay leaves, stir
Add broth, bring to a boil, simmer about 30 minutes
cool and puree

I don't add garlic like the original recipe calls for - I think it overpowers the mushroom flavor.
