¾ cup white rice
2 T. Crisco
5 cups water
2 onions - chopped
¼ tsp. salt
⅛ tsp. paprika
2 cups chopped canned tomatoes
½ cup chopped green pepper
⅛ tsp. black pepper

Directions:
Directions:
Fry the rice in the Crisco till golden brown. Add water, cover and simmer until soft. In another pan sauté onions and peppers for 5-10 minutes, then add tomatoes and seasonings. Add rice and mix together. Bake in a greased casserole dish in a 350ºF oven for 30 minutes, uncovered. TO USE AS A MEAT MEAL: You can also brown pork chops on both sides, and add to the dish. (bone in are tastier than loin chops). I like to bury them in the rice mixture. In this case cover the dish with foil, bake for 30-40 minutes, take off the foil and bake another 10 minutes or so until the pork is tender. The pork gives the rice a fantastic flavor and it's a great meal.
