Sauteed Shrimp and Green Beans Recipe

1 1/8 lbs Shrimp (thawed & peeled)
10 oz Orzo Pasta
4 oz fresh spinach
2 cloves of Garlic
4 T butter (divided)
3/4 lb fresh green beans
1/2 lb plum tomatoes (can use cherry or grape)
2 T creme fraiche
1 T white wine vinegar
2 T olive oil
salt/pepper

Directions:
Directions:
Bring a pot of salted water to a boil.
discard stems of green beans
Peel garlic (or used minced)
Quarter tomatoes

1. Blanche and soak green beans
Once water is boiling, add green beans and cook 3-4 min or until bright green and slightly softened.
When finished, use a slotted spoon and transfer beans to bowl of ice water. Let stand until ready to use.

2. Cook Pasta
With remaining water in pot - add the Orzo pasta and cook 8-9m or until done. Turn off heat.
Reserve 1/2 cup of cooking water, drain thoroughly and return pasta to pot.

3. Start Shrimp
While pasta cooks, rinse shrimp and pat dry. Season with salt and pepper.
In a lg nonstick pan, heat 2T olive oil on med-high until hot. Add seasoned shrimp and garlic. Cook without stirring
1-2min or until lightly browned.

4. Make sauce and Finish Shrimp
Add vinegar and tomatoes to pan. Season with salt/pepper. Cook stirring occasionally 2-3m or until tomatoes begin to release their liquid.
Add the shocked green beans, creme fraiche, and HALF (2T) of butter. Cook until liquid has thickened and shrimp are opaque and cooked through.

5. Finish Pasta/Serve
Add spinach, remaining 2T butter, and 1 half (1/4c) reserved pasta water to pot of cooked pasta. Cook on med-high, constantly stirring 1-2m or until thoroughly combined and spinach is wilted. If sauce seems dry, add remaining pasta water)
Transfer pasta/spinach mixture to serving dish, top with finished shrimp and sauce.
