Ingredients:  
1 medium onion chopped fine
1 large Italian tomato chopped
1 - 12 oz. can of tomato paste
1 stalk of celery chopped fine
3 cloves of garlic minced
¾ tsp. oregano
¾ tsp. basil
¼ tsp Italian spice
1 bay leaf
salt and pepper to taste
1 lb. Italian hot sausage

Directions:
Directions:
Heat Olive oil in a large frying pan. add chopped garlic, celery, and onions. Summer until tender add tomatoes and spices and water bring to a boil. Reduce heat and summer for 1 ½ to 2 hours. add water if necessary.

Hot sausage, Ground meat, cubed pork or meat balls can be added if desired. Cook any added meat before adding to the sauce.

Italian Meat Balls

1 lb. lean ground beef
Garlic salt to taste
Onion salt to taste
½ Cup Parmasan cheese
½ Cup bread crumbs
2 eggs
½ tsp pepper
½ to 1 tsp. oregano

Mix all together, roll into balls and brown in olive oil. Add to spaghetti sauce.
